Hi, my name is Taylor and I am addicted to sunflower butter.

Wow, I feel so much better now that I got that off my chest. Seriously, since I have become vegan and given up peanut butter for Lent I have become far to dependent on sunflower butter, so I decided to take a day off from it today.
I am still on a hiatus from working but I am feeling good. My knee is getting better each day and I can’t wait to get in the weight room on Sunday! Ready for this rest to be over, even though I know it’s important.
Here are my meals from today… I had a few snacks during the day not included here.
Breakfast: Overnight, heated oats! I eat these EVERY morning. Mix it all together the night before and then in the morning just grab from the fridge and heat up for 70 sec. You could eat it right out of the fridge but I like warm breakfast.
Lunch: 1/2 veggie wrap and an almond shake = delish
Dinner: Salad with mixed veggies and topped with marinated tempeh (love this stuff)
I have to show off Dan’s dinner: I had a wrap left and decided to try and make a taco salad bowl, it came out perfect!
- So easy, I heated the oven to 375, then I grabbed two metal mixing bowls… one larger than the other. I flipped the smaller bowl upside down, molded the wrap over it and then placed the larger bowl on top. The wrap was sandwiched between the bowls.
- I heated it for about 8 minutes, removed the top later. Dusted the wrap with a bit of olive oil and heated for another 5 minutes. Watch carefully, until golden brown. Allow it to cool for ~5 minutes before filling ‘er up with salad.
