I have decided to step up with my meals. I make a homemade meal 99% of the week, most of which take less than 30 minutes to toss together for me and Dan. For breakfast, I spend all of 5 minutes preparing my warm meal but it gets done.
I don’t tell you that to brag, but to simply show that it can be done. We can all make time for a healthy, balanced meal. So to help myself stay on top of my meals, to help give you some meal ideas and to help myself remember to take pictures (I have a dream of creating a cookbook)… I am going to start posting at least 2 meals a day but the ultimate goal is to take pictures of EVERY thing that goes in my mouth.
Now I will straight up say that I don’t have time to take a picture of the rice cake I eat for snack but in terms of breakfast, lunch and dinner I think I can handle it.
This is going to be fun! If you have any recipes or meal ideas you would like to share let me know and I will experiment away in the kitchen! But keep in mind that I am vegan, lol… but then again Dan’s not so it doesn’t matter.
To start off here was tonight’s dinner!
Mine is the front plate with Quinoa tabouli salad and asparagus (I went back for seconds).
Dan had the same but also had a serving of chicken drizzled with homemade tzatziki sauce.
The tabouli salad came out of a cookbook I recently received called Quinoa Cuisine (I recently talked about here), it was the first recipe I have tried out of it and it was delicicious. Light, clean and perfect for a warm night. We even enjoyed dinner sitting out on the screened-in porch!
