Chicken Salad Bowls

Ingredients:
  • 4 large, fresh tomatoes
  • 1 rotisserie chicken (I bought it pre-cooked, but you can cook your own if you like)
  • 2 celery stalks, diced
  • 1/2 onion, diced
  • 1 cup red, seedless grapes quartered
  • 3/4 tbsp dijon mustard
  • 1/2 cup Smart mayo
  • 1/2 tsp paprika
  • Pinch of sea salt
  • Pepper to taste
  • Chopped chives for garnish

Directions: 

  1. This is so simple, ready?
  2. First, with the chicken, this takes the longest. Take the chicken and cut it into small cubes. When that is all done… throw in all of the ingredients into a large mixing bowl, and fold until the mayo covers everything equally. If it’s too dry (I am not a mayo person) add small amounts of mayo at a time.
  3. Put the chicken salad in the refrigerator to chill while preparing the tomatoes. Cut them much like a Halloween pumpkin. Cut out the tops, and with a spoon scoop out the inside to make a bowl. Keep the inside flesh (it is great for making homemade sauces).
  4. Grab your salad and fill each tomato bowl. Sprinkle the tops with chives and it’s ready to serve.
