The Easiest Blueberry Coconut Granola Recipe: So Good You’ll Want To Make It Now!

Happy Sunday. We are getting ready to head out to church but before we do I wanted to share with you my new favorite recipe.

Yesterday I spend a vast majority of the afternoon in the kitchen playing around. Partly because my legs were exhausted from my 8-mile run and I didn’t feel up for going anywhere and secondly because I wanted to make Dan homemade granola.

I buy it every week for him to jazz up his yogurt, but that stuff get’s expensive! After searching online for some ideas I came up with this:

It really is super easy, and a great treat to make with the kids.

While I was making the granola, I was sipping on this happy hour treat:

When ever we go to Total Wine, I try to pick up something new to try. I saw this bottle and couldn’t resist. Lucky for me, they sold it by the individual bottles, I was able to try just one. What also sold me was that Son of A Peach is brewed and bottled in South Carolina.

A lot of people think Georgia is the peach state… nope, peaches are actually our state fruit! Surprised?

The peach taste hits your taste buds as soon as you take your first sip, but it isn’t so strong that it over powers the actual beer. I really enjoyed it. I just happen to be the SLOWEST beer drinker ever, so I enjoyed it for over an hour.

Oh yea, I am a party girl.

No, the granola didn’t take over an hour to make, after it was all finished, I moved on to these:

Dan and I are co-hosting a baby shower next weekend and I happen to be in charge of desserts. I wanted to practice, and try out a few new techniques. Not to mention that I suck at making fluffy icing (which is why you don’t see it often in my desserts) so I knew I needed practice.

I wanted something that looked decadent, tasted amazing, and was still vegan. BINGO… except I don’t plan on telling my friends they’re vegan until after they bite in!

  • The pink ones are a coconut cream cupcake with a vegan coconut buttercream frosting.
  • The chocolate ones are chocolate fudge cupcakes with an espresso chocolate glaze.

OMG, Dan said they were delicious and I might have enjoyed a few too many of each myself. The Chocolate fudge were Dan’s favorite, the coconut cream were mine. I am pretty sure I could have eaten the entire plate. But I practiced self control!

We ended the night on the couch with a good movie, The Full Monty. Dan said it was the best male’s stripper movie and since I had just watched Magic Mike I was game to compare… let’s just say, there is no comparision. Lol.
