Honey Wheat Muffins

Ingredients: 

  • 2 cups Whole wheat flour
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 1 1/4 cup Plain Greek yogurt
  • 3/4 tsp Pumpkin spice
  • 1/4 cup Honey
  • 1 Egg
  • 1/4 cup Olive oil
  • 1/2 tsp Vanilla
  • 1/2 cup Dried cranberries
  • 3/4 cup Chopped walnuts

 Directions:

  1. Preheat over at 375 degrees.
  2. In a bowl mix together these dry ingredients: flour, baking soda, salt, pumpkin spice.
  3. In a larger bowl, use a mixer to blend together: yogurt, honey, egg, oil and vanilla. Mix until smooth and well blended.
  4. Slowly add in the flour to the wet ingredients mixing as you go. It’s going to get pretty thick. Then toss in the cranberries and the walnuts mix until just incorporated.
  5. Spray muffin tins with nonstick spray and lightly flour. Fill 3/4 of each with the batter.
  6. Cook at 375 for 12-15 minutes, until a toothpick comes out clean.
