Happy Thursday! As you know, I LOVE Thursdays. I don’t know why but I always have… just an all around great day of the week! lol.
So yesterday I had perhaps my biggest flop in the kitchen. I had this great idea to take a vegetarian recipe I found for veggie quiche and make it vegan. The result… this big, green pile of stuff:
This is what I termed “Vegan Quiche”
Basically it included: broccoli, peas, and spinach all processed together in my blender with 1 cup of flax eggs…
Cooked at 350, and that’s what
pooped popped out! Dan has had a kick making fun of this dish while it sat cooling on the stove top… If I remember correctly there were some jokes about baby diapers, Nike’s hair balls and a few other not so charming bathroom humor thrown in there, which continued on this morning.
Did I eat this? Hell no, I did try it but the mushy texture and Dan’s crude jokes ruined the experience for me. So it was scooped into the trash can quite quickly and it is the recipe that will never be mentioned again, deal?
What did I end up eating?
I enjoyed a fresh smoothie made of 1/2 frozen banana, 1 cup unsweetened almond-coconut milk (love this), 1 tbsp sunflower butter, 1 tbsp organic coconut shavings, 1/2 navel orange… blend and enjoy!

Happy Thursday… now I am off to get in a 5-miler because I am still far to sore from my workout on Tuesday to do the workout I really want to do!
