Recipe: Cinnamon Toast Almonds & Weekend Pictures
Roasted almonds have been my jam lately. We’ve had a challenge going with our ladies and they’ve been requesting ideas for healthy but sweet snacks. After my Chocolate Almonds, I wanted to keep the snack testing going.
Since I made these roasted almonds, I’ve been craving Cinnamon Toast Crunch.
I haven’t had the cereal since I was a kid, but it’s on my brain. Every time I grab an almond (or 20), I am taken back to my childhood days of eating sugar coated cereal every morning… back then Lucky Charms was my favorite, but CTC was up there!
I think the only way to remedy the craving will be to chop up these almonds like a granola, pour on some milk and go to town.
Because, no, I am not buying a box of Cinnamon Toast Crunch.
I am all for splurging from time to time, but really… who can have just one bowl when there is a box of something like that around? Nope, not me… instead, I’ll just make these into a granola and walk away more than satisfied.
If you love cinnamon, then you’re going to LOVE these.
Since the first batch, I’ve gone on to make 3 more. Dan asks for them as part of his weekly snacks. And who am I to deny my husband of such a snack (because really, I love them just as much).
You can use any type of nut you want. We had some left over walnuts so I threw them into the bowl as well. Love the combination of the sweet almonds and the slightly tart walnuts. Cashews and pecans would be delicious too!
Cinnamon Toast Nuts
1.5 Cps Nuts
1 Tbsp Coconut Oil
1 Tbsp Honey (or maple syrup)
1 Tsp Cinnamon
Preheat oven to 350-degrees.
In a microwave safe bowl, heat up honey and coconut oil for 20 seconds, until oil is melted.
In a large tub-a-ware or ziplock bag, mix together all ingredients and shake until everything is evenly coated. Pour onto a baking pan and cook for 10-12 minutes until slightly roasted and fragrant.
Feel free to dust with additional cinnamon or nutmeg before serving.
I’m telling you… make these. You won’t regret it!
I feel like we haven’t connected in a while, sorry about that! Tell me, how’s life? What did you do this weekend?
We kept things low key, which was perfect. Here’s a few random snap shots on my phone from our weekend.
Kisses from Zoe. While Dan was out playing golf, Zoe and I cleaned the house and prepped for the week. Well, I cleaned and she followed me around all afternoon.
Once Dan got home, I took the pork out of the oven, tossed it on top of oatmeal, paired it with braised cabbage and a glass of red and sat down to watch a movie.
Saturday kicked off with hula hooping! The studio offered an upbeat Hula Hoop class taught by one of our clients and it was a hit! So much fun to watch these ladies rock their hulas and we’re excited to add this to our regular schedule.
After Hula Hooping, Dan met me at the studio for some quick filming. Then it was errand time (does anyone else feel like errand never stop?) Make sure to head over to Fit Womens Weekly to see the fully filmed workouts!
Quiche… it’s what’s for dinner! With spinach, bacon, onions, and yogurt. Yes, yogurt. I recently made my own (via this recipe) and decided to add it to my egg mix. It made the batter so creamy and added some extra protein to the mix.
Then we headed off to see John Wick 2… action packed and full of fighting. Dan was a very happy man. It was actually pretty good. If you love fighting, blood, explosions and cars. Luckily, I love action movies!
And finally… Sunday.
Sunday was spent working a lot and running a lot. We headed to Marrington Plantation, a 30 minute drive outside of Charleston, and ran the 14 mile loop. This trail was built for mountain bikers, but it’s GREAT for trail running. We ran about 12.5 of the 14 miles and felt confident. Especially considering this was our first double digit run since October!
