summer here you better believe that I am craving ice cream more than ever.

I have found a great alternative though… grab a sugar-free pudding cup and put it in the freezer about 30-45 minutes before you plan on eating it. It freezes just enough so you aren’t trying to stab a block of ice, it has a great creamy consistency and it’s great for a hot day.

I even top it a little as if it were a chocolate sundae- sugar-free whip cream and almond slivers.
