Yummy Gooey Fruity Energy Bars

I made these last night and they were DELISH!! Even Dan loved them and he generally avoids my homemade protein and energy bars. There is no excuse not to make your own clean eating energy bars once you see this recipe!

Ingredients:

Yummy Apricot Coconut Bars

DRY INGREDIENTS-

  • 1 1/2  cups Quick oats
  • 1 scoop Vanilla Whey Protein
  • 1 tsp Baking powder
  • 1 tsp Brown sugar
  • 1/4 tsp Kosher salt
  • 6 Dried Apricots diced
  • 3 tbsp Coconut sheddings
  • 2 tsp Cinnamon

WET INGREDIENTS-

  • 1 cup Low Fat Almond Milk (unsweetened)
  • 1 Egg
  • 1 Mashed banana

    Perfect after a workout or before!

  • 2 Tbsp Water

Directions:

  1. Combine all the dry ingredients, in a separate bowl blend the wet ingredients.
  2. Pour wet into dry and mix well.
  3. Spray a 9 x 9 baking dish with oil and flour. Pour batter in. Bake at 350 for 20-30 minutes.

    Just curious if we know nutrition facts on these and how many servings the recipe makes? They sound great!

      Carly, I just stuck it into a recipe calculator for you, it makes around 12 servings, each serving is 85 calories and 13 grams of carbs. Hope this helps!
