I have written before about how much I love to eat seafood in the summertime. The past two nights I have made some killer recipes and I wanted to share them with you. Seafood is a great lean protein and all of these recipes follow the eating clean principles. Taste how incredibly flavorful and satisfying eating clean can be.
The first recipe is Buffalo Grilled Shrimp Salad.
For the marinade
1/4 cup olive oil
1/4 cup lemon juice
2 garlic cloves minced
2tsp paprika
1tsp oregano
1/2 tsp celery seed
1/2 tsp cayenne pepper
2 lbs shrimp (for 4) 1lb (for 2)
(I use medium shrimp but any size will do)
Marinate shrimp in a plastic bag for at least 30 minutes. Cover grill rack with tin foil BEFORE heating. Spray foil lightly with olive oil. Grill shrimp 2-3 minutes per side. Remove and top a greens salad. I like to add shredded carrots, tomatoes, and broccoli for added fiber and antioxidants.
My boyfriend enjoys topping with blue cheese as well.
